Lyn loves...

...her Grandmother’s Scottish pancakes drizzled with Tate and Lyle treacle from the Be-Ro book.



100 g Be-Ro Self Raising Flour

pinch salt
50 g caster sugar
1 medium egg
4 x 15 ml spoon milk to mix


1 Mix flour, salt and sugar, add egg and gradually beat in enough milk to make a thick batter.

2 Cook 2 or 3 at a time by dropping spoonfuls of the mixture on a moderately hot, well-greased griddle.

3 Cook until the underside is golden brown and the top is covered with bubbles, about 3 minutes.

4 Turn and brown on the other side.

A little recipe from Lyn’s Auntie Violet: Yorkshire Rhubarb Crumble
 
 


Crumble Daylesford shortbread or Scottish shortbread (no nibbling!)

Gently place the chopped rhubarb in a baking dish

Sprinkle the shortbread over

Sweeten up with a shower of brown sugar

Bake in the oven for 30 minutes

Add your favourite custard!
